Salmon Patties

As you well know, salmon is sooo good for you. Thank God I found this recipe in  my Better Homes & Gardens cookbook. Not only was it fast and easy, BOTH my boys liked it! Hooray for fish!

  • 1 beaten egg
  • 1/4 c. milk
  • 1/4 c. chopped green onions (or 1/2 tsp. onion powder)
  • 1 tbsp. snipped fresh dill or 1 tsp. dried dill
  • 1/4 tsp. black pepper
  • 1 14.75-oz. can salmon, drained, flaked, with skin and bones removed
  • 1/4 c. fine dry bread crumbs
  • 1 tbsp. cooking oil

In a medium bowl combine egg, milk, onion, dill and pepper. Add salmon and bread crumbs; mix well. Form mixture into 1/2-inch-thick patties. Cook in large skillet in hot oil over medium-low heat about 6 minutes or until golden brown, turning once. Serve with tartar sauce or smiley face ketchup.

  1. PS–I tried this recipe with 2 tablespoons of broccoli/squash puree added and used crushed whole wheat Ritz crackers instead of bread crumbs. I thought they were splendid, but Luke and Abram didn’t like this version. What picky, picky boys I have!
