Baked Apple Oatmeal

  • 2 eggs
  • 3/4 to 1 c. evaporated cane juice sugar (or brown sugar)
  • 1/3 c. melted butter
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 1/2 tsp. ground flax seed
  • 2 tbsp. wheat germ
  • 1 c. whole milk
  • 1/2 c. unsweetened applesauce
  • 1 small apple, peeled/cored/chopped
  • 3 c. rolled oats

In an 8×8 in. baking dish, whisk together eggs & brown sugar. Whisk in butter. Add all remaining ingredients, except oats, stirring with whisk after each addition. Fold in oats. Bake 30-35 minutes at 350 degrees. You can also refrigerate overnight and bake in the morning. Serve warm with raisins and whole milk or cream. Alternatively, drizzle with caramel and serve with vanilla ice cream. And why not?
